Healthy Recipes: Lemon Tilapia & Grilled Chicken
This meal was actually a concoction of leftovers from a dinner I made for friends the night before. I had made tilapia and chicken on the grill and red quinoa (and guacamole!) on the side. I had tilapia and chicken leftover in the morning and decided to include that in my lunch. It was a lot of protein and fresh vegetables - tasty and perfect fuel for an intense evening workout!

Here’s a delicious ORGANIC salad I made the other day for lunch! I had some leftover red quinoa that I added for a protein (and flavor) boost. I drizzled olive oil and fresh lemon juice on top for a healthy dressing - this salad gave me A TON of energy for the rest of my day!
